Have you ever made taquitos aka rolled taco before? They’re a delicious Mexican dish that typically involves rolling a tortilla filled with meat and cheese, then frying it until it’s crispy. But what if I told you there was an easier way to make them? You can actually make taquitos in the Instant Pot, and they turn out just as tasty as if you’d fried them yourself. I love cooking in my Instant pot in the RV because it’s less mess and perfect for busy weeknights when you are doing a lot of activities during the day. We have actually made taquitos so many different way. My favorite is my Air Fryer Taquito recipe with pulled pork which makes really good crispy taquitos. I also love to do chicken taquitos and serve them with some salsa verde. But you can also make ground beef taquitos with a ground beef mixture or taco meat and a Mexican cheese blend or you can also make just plain cheese taquitos for the kiddos as well. I love these recipes because it’s less mess than deep frying delicious taquitos on the stove, yet they still get golden brown. Plus I hate messing with hot oil and the instant pot to me is a safer way of cooking them. Now let’s get started on this easy recipe.

Beef Taquitos Recipe:

Here’s what you will need from the grocery store to make this easy Mexican recipe.

What You Need:

  • 1 tablespoon of garlic powder 
  • 1 tablespoon of onion powder 
  • 1 tablespoon of chili powder 
  • 1/2 tablespoon of ground cumin 
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of paprika 
  • 1/2 teaspoon of pepper 
  • 2 lbs. beef roast
  • 14-16 corn tortillas or flour tortillas
  • Oil to fry

Combine all the spices together to make an asada rub. Liberally apply asada to the roast on all sides. Place roast on instant pot trivet, add 1 cup of water to instant pot, place trivet in instant pot. Close the lid and seal the pressure valve. Cook on high pressure for 45 minutes or until roast is tender enough to shred. Quick release pressure and remove the roast. Shred the tender beef and place beef aside.In a skillet, bring vegetable oil to a medium heat. Once hot, place corn tortillas in the oil for 10 seconds, one at a time. Set warm tortilla aside. This step ensures that tortillas will roll without breaking open. Fill each tortilla with couple of tablespoons of the meat mixture. Roll close and pierce with a toothpick to keep them closed, place the taquito in the oil to fry for a few minutes on each side to crisp the shell.Serve with your favorite sauce, salsa, sour cream or guacamole. 

You can also add some shredded cheddar cheese, pepper jack cheese or a cheese stick if you don’t want just meat. I also like switching it up and using white corn tortillas sometimes. Or adding some chipotle peppers and red onion. You can add some queso fresco and cilantro or even some pico de gallo or hot sauce to the tops of the taquitos for added flavor. I also like to add a little lime juice.

You can also make these easy beef taquitos on the stove.

Just heat oven to 425 degrees. Next brush both sides of the tortilla with olive oil. Then place it in a large skillet on medium-high heat for about 1-2 minutes on each side until warm enough to eat without being too crispy or rigidified (when you pull away from the edge). Add your cooked shredded roast to the middle of your warmed tortilla. Roll and place seam side down on a foil lined baking sheet. Then bake for about 15minutes. You can also let them rest on a wire rack if you wish.

If you wanna make a double batch of these to eat later or even the next day. You can let them cool completely and then store them in the freezer in a freezer bag. You can also wrap them in foil before you place them in the plastic bag to help protect them from getting freezer burnt. Try serving them with an adobo sauce to change it up a bit. This is a great way to do make ahead meals.

How to Reheat your Taquitos:

Some people will tell you to reheat in the microwave with damp paper towels. Not unless you want a soggy taquito. You can reheat these tasty taquitos by oven baking them at 350 degrees for about 15 minutes. Simply place the pieces on a baking sheet and spray with cooking spray before popping into your preheated oven. This is a delicious way of making sure you have a crispy corn tortilla.
